abstract The invention discloses a production and refining method of gardenia red pigment, which belongs to the research field of natural pigment. The method disclosed by the invention comprises the following steps of: adsorbing and balancing gardenia yellow extractions through macroporous resins, passing through a column, and eluting with deionized water and 20% ethanol to obtain a geniposide solution; concentrating the geniposide solution, removing the ethanol, then adding sodium hydroxide for alkaline hydrolysis reaction, and adding citric acid to acidize; adding preprocessed geniposide and sodium glutamate to an aspergillus niger fermentation broth, and keeping the temperature to react to obtain conversion liquor of the gardenia red pigment; deactivating enzymes in the conversion liquor of the gardenia red pigment with a boiling water bath, naturally cooling, centrifugalizing, and taking supernatant liquor to be used; and refining the supernatant liquor of the conversion liquor of the gardenia red pigment after enzyme deactivation with an acid adjustment-sedimentation method or a resin method, so as to obtain powder of the gardenia red pigment. The method disclosed by the invention has the advantages of simplicity and convenience in operation of each unit, low energy consumption, manpower and material conservation, economy and environment friendliness, the whole production process can be serialized to realize the efficient industrial production, and a product is bright in color and high in purity.
