abstract The invention discloses a preparation method of high-calcium goat yogurt fermented by lactobacillus plantarum containing ACE (Angiotensin Converting Enzyme) inhibitory peptides and belongs to the field of functional goat dairy product processing. The preparation method comprises the following steps of: (1), inoculating the activated lactobacillus plantarum to goat milk or goat milk reconstituted milk for carrying out anaerobic fermentation to obtain fermented goat milk, wherein the goat milk or the goat milk reconstituted milk is added with calcium citrate and whey powder; (2), sufficiently mixing and cooling fermented goat milk, sucrose, a stabilizer and water to 10 DEG C or below to obtain mixed fermented goat milk; and (3), sealing and standing the mixed fermented goat milk, and carrying out after-ripening to obtain high-calcium goat yogurt containing ACE inhibitory peptides. According to the preparation method of the high-calcium goat yogurt fermented by lactobacillus plantarum containing ACE inhibitory peptides, the high-calcium goat yogurt is prepared by a single bacterial strain fermentation way of lactobacillus plantarum, so that the preparation method is simple and easy to implement. The number of live microorganisms of the lactobacillus plantarum in the prepared high-calcium goat yogurt is bigger than 108cfu/mL, the activities of the ACE inhibitory peptides can reach 75%-90%, the balance of intestinal micropopulations can be adjusted and the immunity of the organism can be strengthened.
