abstract | The invention discloses an enzyme using method, copepoda peptide paste extracted by utilizing copepoda captured from ocean and a production process thereof. The copepoda peptide paste is used for preparing feed and taken as a food calling growth promoter for aquatic aminals, is a red brown paste object in appearance and has strong specific copepoda flavour. The copepoda peptide paste comprises the following components in percentage by weight: less than or equal to 40% of moisture, more than or equal to 40% of crude protein, less than or equal to 8% of crude fat, less than or equal to 10% of ash and more than or equal to 35% of amino acid; the copepoda peptide paste is especially rich in taurine, alanine and glycine; and the production process comprises the following steps of: placing copepoda raw materials into a mesh bag, cleaning and removing mud and impurities, and grinding the cleaned raw materials into thick liquid; regulating pH of the thick liquid to be 6.5-7.2, and adding animal protease and flavour enzyme for hydrolyzing; inactivating an enzyme; separating and concentrating reactants, and adding a flavouring agent to remove bitter taste produced in an enzymolysis process; and then cooking and sterilizing, and finally sealing and packaging, wherein powder can be further prepared. The copepoda peptide paste disclosed by the invention is simple in production technology, additional value of raw material utilization is high, and environment-friendly production is promoted. |
