abstract The invention provides an identification method and an identification device of a fermentation moderate point of black tea. Red light, green light and blue light in fermented leaf reflected light are respectively red, green and blue (RGB). The identification method of the fermentation moderate point of the black tea comprises the following step: firstly, obtaining hold times T1 and T2 of parameter values of fermentation indexes F1=R/G and F2=R/(R+G+B) of the fermentation moderate point of the black tea; secondly, collecting and calculating F1 and F2 of fermented leaves, wherein when a hold time of a platform reaches T1 or T2, the fermentation moderate point is reached. A plurality of white light-emitting diodes (LEDs) are arranged in a lightproof outer shell of the identification device of the fermentation moderate point of the black tea, and are arranged in a rounding mode by using a color sensor as a center. The color sensor and the LEDs are respectively provided with a light focusing cover and a light reflecting cover, wherein the height of the light focusing cover is the same as the height of the light reflecting cover. A transparent baffle is installed on a cover bottom in a sticking mode. A singlechip is connected with the color sensor, a clock circuit and a displayer. The identification device of the fermentation moderate point of the black tea is arranged on the fermented leaves, collects reflected light, calculates the F1 or the F2, and alarms when the F1 or the F2 is reached. A plurality of identification devices of the fermentation moderate point of the black tea are arranged on different monitory points, and are connected with a host computer to be used in a networking mode. The identification method and the identification device of the fermentation moderate point of the black tea timely and accurately prompts the fermentation moderate point of the black tea, is uniform in processing technology, improves and stabilizes quality of the black tea, and facilitates improvement of technologies.
