abstract The invention relates to the field of food production and machining, and in particular relates to an instant boiled goose manufacturing process which utilizes the conventional manufacturing method with the combination of vacuumed packaging production. The manufacturing process comprises the following steps of (1) selecting a boiled goose; (2) pickling; (3) boiling, including heating peanut oil, putting the pickled goose into a large pot, holding the legs of the goose, boiling in the pot repeatedly till the goose skin is golden yellow, foisting spice for picking the goose into the goose abdomen from the cut opening, sewing up by using a needle and thread, sprinkling the spice on the goose and heating for 30 minutes by using big fire; (4) cooling; and (5) packaging, including putting the goose into a package bag and vacuuming so as to manufacture the instant boiled goose. The manufacturing method adopts the traditional cooking process with the combination of secret spice for pickling and boiling the goose, and subsequently the goose is packaged by using the scientific vacuumed packaging method, so that the boiled goose does not lose the original taste and the quality is ensured; and meanwhile due to the vacuumed package, the boiled goose can be packaged and sold, growth of parasite is prevented, and the long-term preservation is realized.
