abstract The present invention discloses a rapeseed stir-frying rapeseed oil production process, wherein rapeseed is subjected to impurity removing through a cleaning sieve, then is subjected to a freezing treatment to carry out wall breaking, and is subjected to stir-frying to achieve a 60-70% doneness so as to easily achieve oil leaching. According to the present invention, a levigation process is adopted, ozone is introduced, and decoloration adopts a specially-treated absorbent; processes of freezing and heating are sequentially performed, such that wall breaking of rapeseed cells is easily achieved, and an oil yield of the production process of the present invention is increased, and is increased by 5-8% compared with an oil yield of the conventional pressing method; and the levigation process is adopted to take oil, such that no pollution is generated, oil product purity is ensured, a pure nature characteristic is provided, and green food requirements are met.
