abstract | The invention relates to a composite biological coating agent and a method for using the composite biological coating agent in fresh keeping of blueberry, belonging to the field of food processing. The composite biological preservative film is prepared from biogenetically derived water-soluble chitosan, nisin, lysozyme and nano silicon polyoxide, propylene glycol, glycerin and citric acid in proportion. According to the invention, fresh blueberries are subject to pretreatment, are coated with chitosan composite biological preservative film, dried in cold air, and preserved in a cold storage, wherein the temperature in the cold storage is the freezing point temperature of the blueberry, and the relative humidity is 90-95%; and the blueberries can still keep special flavor, color and nutritional components after being preserved for 50 days under the conditions. The blueberries have high commercial value and good economic benefit. The method disclosed herein has the advantages of mild conditions for preparing the composite biological coating agent, simple operation, and easiness in popularization. |
