| abstract | The invention discloses a method for preparing a natural red jujube skin pigment and application of the natural red jujube skin pigment. The method comprises the following steps of: removing jujube flesh from red jujubes to obtain red jujube skin; drying the red jujube skin, crushing, leaching in a weak base solution, and filtering to obtain a red jujube skin pigment stock solution; and concentrating, drying and crushing the red jujube skin pigment stock solution to obtain powdered natural red jujube skin pigment. According to the method, a process is simple and low in cost and is suitable for large-scale production; and the powdered red jujube skin pigment ensures the stability and wide application of the pigment. The prepared natural red jujube skin pigment has the antibacterial activity on gram-positive bacteria of staphylococcus aureus, listeria monocytogenes, lactobacillus, alicyclobacillus and the like and on gram negative bacteria of escherichia coli, proteus, shigella dysenteriae, pneumobacillus, acinetobacter and the like. |
