The present invention relates to Rhodanobacter ginsenosidimutans KCTC22231T-derived ginsenoside glycosidase protein and to the use thereof, wherein the protein has an activity of selectively hydrolyzing a specific site bond of ginsenoside to transform protopanaxadiol (PPD) saponins into a deglycosylated highly active material which is absorbable in vivo.; In detail, the present invention relates to an amino acid sequence constituting the protein, to a nucleic acid sequence for encoding the protein, to a recombinant vector comprising the nucleic acid sequence, to a transformant transformed by the vector, to a method for preparing Rhodanobacter ginsenosidimutans KCTC22231T-derived ginsenoside glycosidase by transformant cultivation, to a method for transforming PPD-type major saponins into a rare saponin type that is absorbable in vivo using the protein, and to a composition for transforming PPD-type saponins containing the protein as an active ingredient into a saponin type that is easily absorbable in vivo. |
