abstract The invention belongs to the alcohol processing technical field, more specifically relates to a method for producing alcohol by jujube. The preparation method comprises the following steps: taking raw material jujubes without impurities, adding water and crushing and pulping; heating a slurry to the temperature of 80-85 DEG C, keeping for 2-3 hours to obtain liquefied mash; sending the liquefied mash in a fermentation cylinder, successively adding water, ammonium sulfate, ammoniacal liquor with concentration of 25% and sulfuric acid with concentration of 92%, regulating the pH value of a mixture in the fermentation cylinder to 4.5, then adding angel yeast with high temperature resistance and high activity and then fermenting; and distilling the mature fermented mash to obtain the standard alcohol. The present invention has the advantages that insufficient food problems can be effectively alleviated and a new market for processing and exploiting the jujube is provided. The inferior jujubes can be used for producing alcohol, which changes waste into valuables, and the method of the invention is capable of eliminating or effectively controlling the pollution of circumference environment, reducing the production cost of enterprises, raising the economic benefits and meeting the requirement of circular economy.
