abstract The invention provides a method for exogenous total sugar in dried sea cucumbers. The method is characterized by comprising the following steps of: shaking an ethanol aqueous solution with a high concentration under a water bath with a certain temperature to extract exogenous sugar in the sea cucumbers, wherein polysaccharide of the sea cucumbers is not extracted so that endogenous sugar and the exogenous sugar of the sea cucumbers can be better distinguished; and utilizing an optimized phenol-sulfuric acid method to detect the content of the total sugar. The method provided by the invention has the advantages of simplicity in operation, good stability and high accuracy, and is applicable to detecting the content of the exogenous total sugar in the dried sea cucumbers.
