abstract | The invention discloses a method for preparing nitrogen-containing starch syrup by a crushed rice multienzyme method, comprising the following steps of: adjusting pH of crushed rice which has undergone impurity removal, crushing, washing, immersing, defibrination and size mixing to 5.8-6.4, adding high temperature resistant alpha-amylase, carrying out continuous spray liquefaction on the material at 108-110 DEG C for 2-3 min, supplementing high temperature resistant alpha-amylase, keeping warm at 95-100 DEG C for 50-80min; carrying out continuous spray liquefaction on the material at 129-131 DEG C for 1-2 min, followed by flash evaporation, depressurization and cooling, keeping warm at 97-100 DEG C for 10-30min to obtain a liquefied fluid; saccharifying the liquefied fluid, followed by protein conversion, filtration and concentration to obtain the nitrogen-containing starch syrup product for fermentation. By the adoption of the method provided by the invention, the conversion rate and yield rate of the raw material dry solid are high, and the product is applicable to be used as a raw material for producing products such as fermented foods, biochemical pharmaceuticals and the like. |
