abstract The invention discloses instant asparagus powder and a preparation method thereof. The method comprises the following steps of: leaching asparagus older leaves (non-fresh parts) serving as a raw material with hot water (under the assistance of ultrasonic waves); and performing rough filtration, clarification, fine filtration, concentration and spray drying on the leach liquor to obtain water-extracted instant asparagus powder. The obtained asparagus powder contains a plurality of functional active substances (polyphenols, flavones, polysaccharides, saponins and the like) of asparagus, has rich nutrition, is dissolvable in normal-temperature water, is clarified and transparent, and is prevented from precipitating easily. The method has a scientific and reasonable process design, is easy tooperate, and is practical and environmentally-friendly. Meanwhile, a novel method for comprehensively using byproducts of asparagus is provided, waste is changed into valuable, and the comprehensive utilization value of asparagus is increased.
