abstract |
In the method for preparing capsaicin ester substances by using enzyme and esterification, a method for obtaining capsaicin ester substances conveniently with high yield, short time and without dehydrating agent is provided. In addition, by purifying the obtained capsaicinoids under stable conditions, a method for stably preserving the prepared capsaicinoids is provided. The fatty acid represented by the formula (1) is condensed with the hydroxymethylphenol represented by the formula (2) without a solvent or in a low polarity solvent using an enzyme as a catalyst to obtain an ester compound represented by the formula (3). In addition, the fatty acid represented by formula (4) is added to the ester compound represented by formula (3) for stabilization. where each symbol is as defined in this specification. |
