In accordance with the invention, beverages derived from barley characterized by markedly reduced levels of both dimethyl sulfide (DMS) and its precursor S-methyl-Lmethionine (SMM) are provided or lacking such compounds. Furthermore, the invention relates to methods for producing the above-mentioned beverages and also to barley plants useful in the preparation of said beverages, as well as to other plant products prepared from said plants. The use of the invention clarifies how to carry out improved production processes for beverages with improved flavor profiles and also promises remarkable reductions in thermal energy input for beer production. |
