abstract |
The enzyme is extracted from a culture of a marine bacterial strain, especially a photobacterium, by maintaining an aqueous dispersion of the microorganism at 4 DEG C, then for a few minutes at 50-60 DEG C while its pH is at 6.5-8, cooling to 4 DEG C, centrifugation, fractional precipitation of the enzyme using the supernatant fraction by addition of a neutral salt and renewed centrifugation. The enzyme thus obtained is useful as inhibitor of the oxidation of foodstuffs and other oxidisable materials. |
