abstract | Title cpds. are of formula: (in which R1 is a 2-6C alkyl or alkenyl; R2 is H or 1-3C alkyl; and R3 denotes -CHR4CH(R5)(R6) or -CH=C(R5)(R6), in which R4 is H or OH; R5 and R6 denote independently H or alkyls or alkenyls contg. =6C atoms). These cpds. are included in amts. of 0.01-100 ppm (pref. 0.1-10 ppm) in foodstuffs to impart some aroma and taste, e.g. butter or fruit aroma. They are prepd. by cyclising R'-COO-CH2-CHOH-CH2OH with R2-CO-R3, or by esterifying cpd. of formula: with R'COOH. In both cases water produced by the reaction is removed. |
