abstract Unsatd. aliphatic ketones (I) having an isolated double bond on the 1-position or two conjugated double bonds in the 1- and 3-positions as represented by the dotted lines, and R1 and R2 = H or C1-6 alkyl are made by treating a diol (II) contg. a saturated or monounsaturated 6-ring in which the double bond is represented by the dotted lines, with an acid dehydrating agent such as dilute H2SO4. Dehydration may be carried out in the pres. of metal derivatives such as mercuric acetate to increase the yield of (I). Products have organoleptic properties and are esp. useful as perfume and flavour additives, e.g. in foodstuffs.
