abstract The invention relates to processes for extracting an unsaponifiable fraction from a solid renewable raw material, comprising the extraction of the fats from the solid renewable raw material leading to the production of an oil, the concentration of the oil to obtain a mixture enriched in unsaponifiable fraction, and the liquid-liquid extraction of the mixture enriched in unsaponifiable fraction in the presence of at least one polar organic solvent and at least one apolar cosolvent immiscible with said polar organic solvent, leading obtaining a polar organic phase enriched in lipids functionalized by one or more functions selected from the hydroxyl, epoxide, ketone, thiol, aldehyde, ether and amine functions, and an apolar organic phase enriched in lipids not containing or few functions hydroxyl, epoxide, ketone, thiol, aldehyde, ether and amine, then the concentration of organic phases.
