abstract | The present invention relates to a method for preparing a coated cheese product, said method comprising the steps of: a) injecting a viscous cheese material between two coating films and in contact with said films, said films being malleable to the storage temperature of said coated cheese product and each comprising, on the outer face, at least one outer layer consisting of a coating composition C1 in the gelled state, said coating composition comprising at least one hydrophobic polymer, and b) forming at least one coated cheese product, by pressing on the outer face of each of said two coating films, so as to obtain a coated cheese product comprising a core comprising said cheese material and a malleable coating with the storage temperature of said coated and moisture-proof and microorganism-proofed cheese product, completely surrounding the core at its periphery, said coating e being constituted by the pressure assembly of said two coating films and comprising at least one outer layer consisting of said coating composition C1. |
