abstract | It is intended to provide alcoholic beverages having a well-balanced, fresh and natural aroma of Perilla frutescens var. crispa (red shiso) by overcoming the disadvantage caused by the oily and grassy smell of peryl aldehyde that is the main aroma component of P. frutescens var. crispa. By appropriately controlling the temperature of the distillation materials filled in a distillation pot in the course of producing a distilled alcoholic beverage, the aroma components of P. frutescens var. crispa employed as a part of the starting materials can be collected in a balanced manner and thus a distilled alcoholic beverage having a fresh and natural aroma of P. frutescens var. crispa can be obtained. According to this distillation method, no additional plant investment is needed and a distilled alcoholic beverage with excellent qualities can be obtained while minimizing the production cost. |
