The invention relates to novel caramels with a high prebiotic oligosaccharide content. The invention comprises the transformation of food-grade sugars containing D-fructose into caramels rich in oligosaccharides with prebiotic activity, either using solid acid catalysts, such as zeolites, clays or ion-exchange resins in the acid form in a heterogeneous medium or using high-molecular-weight soluble polymeric acid catalysts in a homogeneous medium, whereby the catalyst can be recycled. The invention is compatible with both discontinuous and continuous production processes. The resulting caramel exhibits prebiotic properties, promoting the development of a beneficial intestinal flora, and a reparative effect on the damaged colon. |
