A composition for lowering glycemic index (GI) of foods or feeds which contains guar bean protein and a galactomannan decomposition product; a low glycemic index food containing polygalactosyl mannose, gliadin and glutenin at a specific ratio; a low glycemic index food containing polygalactose and/or a polygalactose derivative, gliadin and glutenin at a specific ratio; a low glycemic index food containing polygalactosyl mannose, amylose and amylopectin at a specific ratio; and a low glycemic index food containing specific polygalactose and/or a polygalactose derivative, amylose and amylopecin at a specific ratio. |
