abstract A dough product (20) suitable for storage by refrigeration or freezing that includes a package (22) constructed as a chub from a substantially gas impermeable material closed at opposite ends (29, 30) around a dough portion (24) containing at least flour, a liquid, and a leavening system. The packag e includes at least one gas transfer passage (34). The leavening system at lea st partially proofs the dough after insertion into and closing of the package, such that the dough (24) expands to a volume substantially equal to the volu me of the package (22) and has a high raw specific volume. The proofed dough bears against and seals the gas transfer passage (34) to thereby arrest further proofing and prevent oxygen entry into the package. The dough produc t (20) is then stored at refrigeration or freezing temperatures for later baking, without additional proofing, into a bread product having a high bake d specific volume.
