abstract |
An iron-casein complex hydrolyzate being rich in iron, giving an aqueous solution not causing precipitation even by heating, and not tasting astringent. The complex hydrolyzate is produced by (1) limitedly hydrolyzing an iron-casein complex with a proteolytic enzyme or (2) mixing carbonic acid and/or bicarbonate with iron and a product of the limited hydrolysis of casein with a proteolytic enzyme. The complex hydrolyzate gives an aqueous solution not causing precipitation even by heating and is free from astringency, thus being useful as the raw material for food or drugs or as feedstuff. |
