abstract |
A process for producing yeast extract by which the coloration and odor characteristic to the extract can be relieved while leaving available components thereof such as amino acids intact. This method makes i t possible to decolor and deodorize yeast extracts obtained by the conventional methods while scarcely reducing the contents of available components thereof such as amino acids. The obtained yeast extract can be blended with other materials and therefore usable in various fields including seasonings, cosmetics and health foods. Thus it is expected that the range of application of yeast extracts can be enlarged thereby. |
