abstract |
The present invention relates to an aqueous food composition essentially non-milk with constant bacteriological quality during appropriate duration including as a component substantially inhibiting bacteria development, an effective amount of at least one monosaccharide allowing to increase the osmotic pressure of the medium and minus a bactericidal enzyme. It also relates to a method for inhibiting bacterial growth or to significantly decrease the population bacterial of a food or cosmetic composition, characterized in that that an effective amount of a monosaccharide is added to said composition allowing to increase the osmotic pressure of the medium and at least one enzyme bactericide. |
