A dish-washing process in industrial dish-washing machines (23) is disclosed. A detergent (2, 19) and another active substance which reinforces the detergent action are dosed into the rinsing or washing bath of the dish-washer (23). In order to durably prevent the formation of a starch deposit on the dishes washed in industrial dish-washers, a low alkaline detergent, is particular a phosphate- or NTA-based detergent, is used as a detergent (2, 19), and a detergent booster (5) containing an enzyme, preferably a carbohydrate-decomposing enzyme, in particular amylase, is used as additional active substance. It is also possible to compensate the decomposition or the degradation of the enzyme during standstill phases (11) of operation of the dish-washer by adding maintenance doses (17, 18) or intermittent doses (SD) to the washing bath before the start of a new active rinsing phase. |
