abstract |
The invention concerns with soured, water-continuous creams that are free of emulsifier and contain 5-15 wt% of at least a vegetable fat, a protein component and a thickener composition. Those creams are stable and spoonable according to the definition herefore in the specification. Also a process for the preparation of those creams is part of the invention. |
