abstract | ABSTRACT OF THE DISCLOSURE: The invention deals with a process for the manufacture of cyclodextrins characterized by the reaction of starch to cyclodextrin-glycosyl-transferase (CGTase) which is produced by Bacillus ohbensis (FERM BP-3180) or produced by a mutant derived from Bacillus ohbensis (FERM BP-3180) or produced by any other strain in which CGTase gene from B. ohbensis has been introduced, (advantageously in an aqueous solution), and by the fact that the cyclodextrins are extracted from the reaction mixture by ultrafiltration. Preferably, the reaction mixture has a pH included between 6.5 and 8.8. |
