abstract ABSTRACT OF THE DISCLOSURE The invention provides a method of wine making which includes the step of inoculating the grape juice with a strain of Schizosacc-haromyces malidevorans which is capable of at least substantially comple-tely utilizing L-malic acid without substantial utilization of glucose under wine-making conditions. Strains of Schizosaccharomyces malide-vorans having the above capability and a screen for identifying such strains are other aspects of the invention.
