abstract ABSTRACT OF THE DISCLOSURE The invention concerns the food sector; it relates to a milk depleted or not depleted in calcium and enriched in magnesium, such as, for example a milk depleted in calcium by the removal of 25-50% of the calcium initially contained in the milk, by passage of the milk over an ion exchange resin and the sub-sequent addition of magnesium in a quantity ranging up to 1 g/liter of Mg++. Application: milk and milk products, such as yogurts, enriched in magnesium.
