abstract | LIMONENE-BASED STRIPPER OIL ESSENCE Abstract Aroma and flavor volatiles are removed from freshly squeezed orange juice in a stripping process (preferably with steam). The removed volatiles are condensed. The condensate can be separated into two fractions when water is present. These are: a limonene-based stripper oil essence product and an aqueous stripper essence. The limonene-based stripper oil essence product comprises, in addition to at least 695 mg/ml limonene, less than 1.1 mg./ml. of linaiool; less than 1.1 mg./ml. of nonanol, the ratio of nonanol to linalool being from about 0.5 to about 4:1. Other water-insoluble, limonene-soluble orange aroma and flavor volatiles are also present. The level of longer chain aldehydes and longer chain alcohols is higher than in conventional essence oils. |
