DRY MIX FOR LAYER CAKE CONTAINING CITRUS JUICE VESICLE SOLIDS ABSTRACT OF THE INVENTION Disclosed are dry cake mixes which produce improved layer cakes. The cake mixes contain flour, sugar, emulsified shortening, leavening agents, and from about 0.2% to 10% by weight of dried citrus juice vesicle solids. The juice vesicle solids have a moisture content between about 5% to 12% and a particle size of from about 50 to 400 microns. |
