abstract | PROCESS OF OBTAINING DEHYDRATED COCONUT WATER AND RESULTING PRODUCT. More particularly, the process of obtaining dehydrated coconut water and the resulting product, more specifically, concerns the processing of coconut endospheric liquid (Cocos nucifera L.) for the production of powdered coconut water (ACP) through a thermal process; the process of obtaining dehydrated coconut water consists of the fact that all the steps that include the steps of: a) selective fruit collection (1) with 150 to 180 days of fruiting; b) parameterized selection; c) reception and automatic cleaning of the selected coconuts; d) mechanized opening of the coconuts to obtain the liquid coconut endosperm; e) disposal of the coconut shell (11); f) homogenization of the liquid coconut endosperm (ACIN); g) filling of the homogenized product in plastic packages (19) and packaging them in a refrigeration chamber (20) with temperatures between 5 to 00C and then directing to the freezing tunnel (21) at -18 C; h) sanitization and removal of packages (19) from the tunnel, said packages (19) being taken to a washing sector (22); i) crushing; j) dehydration; k) the dehydrated crude product (ACP) is packed in bulk aluminum packaging (26) or another equivalent; 1) refining of (ACP); the above described process ensures that the resulting powder (ACP) is standardized and stabilized, presenting potential for the development of numerous products, maintaining some original chemical characteristics and optimizing other characteristics in relation to "in natura" coconut water, maintaining greater validity and lower cost than other thinners. |
