abstract | THE USE AND APPLICATION OF CHITOSAN IN CLARIFYING DRINKS. The present invention reports the use of Chitosan in the clarification of beverages, including juices, wines, fermented, distilled, soft drinks, cashews, among other drinks not mentioned, through an unprecedented, simple, effective and low cost procedure. The beverage clarification technology object of this invention is based on the removal of lipids, insoluble solids and other components that cause turbidity or color change in the beverage, as an effective method of preserving, whitening and optimizing market acceptability. Also part of this invention, as a technological increment is the unprecedented combined use of pectinase in the clarification process as a technological adjunct to Chitosan, enhancing the action of clarification and preservation of the treated drinks. The product resulting from the clarification process proposed in this invention may be a high quality raw material for the execution of product concentration processes such as juices, wines, soft drinks, fermented products, etc. |
