abstract drinks derived from barley and malt with low dms levels. according to the invention, beverages derived from barley are characterized characterized by remarkably low levels, either of dimethyl sulfide (dms) and / or its precursor s-methyl-1-methionine (smm), or without said compounds. moreover, the invention relates to methods for producing the aforementioned drinks - and also to barley plants useful in the preparation of such drinks, as well as other plant products prepared from said plants. the use of the invention paves the way for taking better beverage production processes with improved flavor profiles, and also promises significant reductions in the entry of thermal energy into beer production.
