plant protein preparation, method for producing a protein preparation, and use of the protein preparation. The invention relates to a plant protein preparation, especially a lupine protein, and a method for producing it. the protein preparation consists of an aqueous mixture having a water content of more than 75 wt%, and a solid material containing more than 70 wt% of plant protein, a percentage of plant protein in said mixture being denatured . The preparation has excellent technofunctional properties, is easy to process and has substantial fat oxidation stability. The protein preparation according to the invention may be used as an ingredient in the production of foodstuffs and as a substitute for commercial plant and animal protein preparations. |
