abstract The present invention relates to a DNA sequence of a bovine protease, a recombinant enzyme used in the milk coagulation process, in place of the traditional rennet. More specifically it refers to the synthetic DNA sequence of bovine procymosin B, which may be expressed by fungi in general. The present invention aims to produce an enzyme with characteristics similar to animal chymosin, which is the enzyme of preference for milk coagulation, the production stage necessary for the manufacture of cheese of different types and other products derived from milk coagulation specifically, solving the problems related to taste and desirable characteristics for the final product.
