abstract | Process for Solubilizing Flavoring Oils. The inventive process allows the solubilization of flavoring oil in water to produce clear beverages. The amount of emulsifier required for oil solubilization is lower than that of oil, and a typical ratio of oil to emulsifier is 2: 1. First, a crude emulsion is generated by high pressure mixing of the emulsifier and flavoring oil. The crude emulsion is then fed into a homogenizer to produce a more refined emulsion. The resulting flavored concentrate can be diluted to produce clear beverages, the process also simplifying the introduction into beverages of normally insoluble nutraceutical ingredients, particularly lipophilic ones. Compared to micro-muson formulations, the process provides a simple way to formulate and customize for different flavors and nutraceuticals. |
