abstract | Patent of Invention: "Milk Concentrates Stable on the Shelf to Prepare Sour Milk-Based Drinks". The present invention relates to a shelf stable base composition useful for preparing acidified milk based beverages, for example by diluting with water in a beverage dispensing machine, comprising: from about 2 to about 10% by weight of denatured milk proteins expressed as components of non-solid fat milk (SNF), from about 15 to about 80% by weight, expressed as sugar equivalents of a carbohydrate-based or non-carbohydrate-sweetener; from about 0.35 to about 1.50% by weight of a carbohydrate based stabilizer; and an acidulant present in amounts necessary to achieve a pH of from about 3.0 to about 3.8 of said base composition. The invention also relates to methods for preparing the base composition and premixed acidified milk beverages by means of such base composition. |
