abstract PROCESS FOR EXTRACTION OF CITRIC FIBER FROM CITRIC VESicles. Citrus fiber is recovered from citrus vesicles to provide food additives for beverages, baked foods, meat or meat emulsions, confectionery, pastries and jellies, dairy products, sauces, energy bars, and the like. Optionally, the citrus vesicles are washed with water and the water washed vesicles are recovered. The vehicles are contacted with an organic solvent to obtain organic solvent washed vesicles. The solvent is removed from the organic solvent washed vesicles and the dried citrus fiber is recovered.
