abstract | flavoring composition, use of a substance, product, and process for enhancing the flavor of a food, beverage, pharmaceutical or oral care product. The present invention, in a first aspect, relates to improving the taste of foods, beverages, drugs, tobacco products, and oral care products using a substance according to formula (1), or edible salts thereof. , formula (i): R 1 H 2 -C 2 H 2 O (OR 3 H) -CO-X. It has been found that substances represented by formula (i) are capable of modifying and complementing the sensory impact of flavoring substances. thus, the present flavor enhancing substances are advantageously applied in flavoring compositions, foods, drugs, tobacco products and oral care products. Typical examples of taste enhancing substances according to the present invention include n-lactoil gmp, n-lactoil amp, n-lactoil cmp, n-lactoil imp, n-gluconyl gmp, n-gluconyl amp, n-gluconyl cmp, n-gluconyl imp; o-lactoil-amp, o-lactoil amp, o-lactoil cmp, o-lactoil imp, o-gluconyl gmp, o-gluconyl amp, o-gluconyl cmp and o-gluconyl imp and mixtures thereof. |
