The invention generally relates to methods and compositions concerning fungal desasturase enzymes that modulate the number and localization of double bonds in long chain polyunsaturated fatty acids (lc-puff's). In particular, the invention relates to methods and compositions for improving omega-3 fatty acid profiles in plant products and parts by employing desasturase enzymes and nucleic acids encoding such enzymes. In particular embodiments, the desaturase enzymes are fungal β12 desaturases. Canola oil compositions having sda and maintaining the beneficial oleic acid content are also provided. |
