a postprandial insulin response attenuation method comprising administering to a subject a composition comprising at least one sugar alcohol, monk fruit, a rheology modifier and tagatose in which an individual eating a carbohydrate-containing food comprising the composition exhibits a reduction in postprandial insulin response from approximately 10% to approximately 90% over a period of approximately 15 minutes to approximately 180 minutes subsequent to ingestion of carbohydrate-containing food as compared to postprandial insulin response. of an individual who eats another identical carbohydrate-containing food comprising an equivalent amount of sucrose. |
