abstract | The present invention describes a process for extracting pectin from a pectin-containing starting material, comprising: an acidic extraction, wherein said starting material is subjected to extraction using an acidic solution by extracting a first extract and leaving a first residue, wherein said first extract comprises pectin; and an enzymatic treatment, wherein said first residue is subjected to an enzymatic treatment using an enzyme-containing solution which results in a second extract and a second residue wherein said second extract comprises pectin. The invention further describes the use of the pectin obtained by this process for stabilizing beverages, structuring acidified dairy products, such as a dietary fiber, a gelling agent, a stabilizer in dairy desserts and/or a protein complexing agent. |
