PROCESS FOR PREPARING A DEODORIZED OIL AND DEODORIZED OIL. The present invention relates to a process for preparing a deodorized oil with monoacylglycerides prepared in situ and the oil obtained as such. Refers to a process for preparing a deodorized oil containing monoacylglycerides prepared in situ by interesterification, in the presence of an enzyme, of a glyceride-containing fraction in which the ratio of free and esterified hydroxyl groups (OH) to free and esterified fatty acids (FA ) is greater than 1.07 and obtaining an oil composition containing less than 1% by weight, preferably less than 0.5% free fatty acids. In addition, it refers to a deodorized oil containing 30 to 70% triglycerides, 20 to 50% diacylglycerides, 1.5 to 25% monoacylglycerides. |
