abstract |
The present invention relates to a method of producing mutant yeasts, mutant yeasts and their use. In order to provide yeasts which at a given sugar content produce a low ethanol content and a relatively high glycerol content in the ethanolic fermentation and which are simultaneously obtained rapidly, it is proposed according to the invention that by at least one yeast strain is brought into contact with a first mutagen in a first mutagenesis step and in a second mutagenesis step in contact with a second mutagen where the first and second mutagen are different from each other and are selected from the following groups: nucleotide alkylating agent, nucleotide disintegrating agent and uv radiation, and wherein a first selection step is performed between the first and second mutagenesis step and a second step selection is performed after the second mutagenesis step, in which mutants originating from the previous mutagenesis step are exposed respectively to a selection factor selected from the following groups: (a) hypertonic medium and (b) alcohol dehydrogenase inhibitor. |
