The present description relates to extruded protein products and methods for producing an extruded protein product. In particular, an extruded piece is described as having a high protein content and having a desired texture and taste. Methods for producing an extruded part include processing, under extrusion conditions, a combination of an energized protein ingredient, a protein matrix disruptor ingredient, water, and an oil. |
