abstract The invention relates to the field of cheese making, in particular to the production of soft or creamy cheese. A method for the preparation of a creamy cheese product is provided, comprising the steps of (a) wholly or partially coagulating the protein of a dairy product through the action of rennet or other suitable coagulant agents; (b) partially draining the coagulation whey to obtain a cheese curd; (c) preparing a mixture of cheese curd, water, an amylomaltose-treated starch (ats) and a pre-gelatinized starch (ps); (d) heating and shearing the mixture to a temperature between 70 and 80 ° C; followed by (e) cooling the mixture while stirring to obtain a creamy cheese product. A creamy cheese obtained by the process is also provided.
